When I was only eight years old in Zambia, my mum left for the UK for a few months. I so missed her cooking and the very first thing I cooked was a tomato and onion gravy. This amazing and versatile sauce pays homage to that experience. It has a lovely depth and intense rich flavour.
Use as a Braai (BBQ) relish, perfect as a pizza and pasta base or to enrich a stew or use it in its traditional way by adding it to a can of baked beans.
