A Healthier Pancake

Ingredients (Serves 2-4)
60g/4 Tablespoons Spelt Flour
15g/1 Heaped tablespoon of Linwoods (milled flax, sunflower, pumpkin & sesame seeds & goji berries)
15g/1 Tablespoon Plain flour
1 x Large Egg
100-120 ml Whole milk
10ml/1 Tablespoon Sunflower Oil
Pinch Salt
40ml/4 Tablespoons Water
1 Teaspoon Baobab fruit powder (optional to add to pancake mixture)
(Will make around 4-6 pancakes depending upon the size of the pan!)
For the fillings
2 Tablespoons Sweet Freedom (or honey)
1 Teaspoon Baobab Fruit Powder
Dark chocolate
Milk chocolate - in case kids whinge about the dark !
Method & Prep time mins - 10 mins
Heat a non stick pan (medium to high heat) or cast iron crepe pan if you have one.
Put all the ingredients into a blender and mix.
Add a teaspoon of sunflower oil to to pan and pour enough mixture to cover the pan.
Cook for a 30 secs to 1 minute on either side until ready.
Next mix the sweet freedom (or honey) with the baobab fruit powder until you have a smooth consistency, spread over pancake and roll. Drizzle over the pancake for a fancy finish!
Or if a fan of chocolate, grate some dark chocolate to the pancake the roll!
