Ingredients (Serves 4-6)
1 Small Onion
1kg Fluffy Potatoes (Maris Piper, Desirer or King Edwards)
Small handful Parsley
Pinch of Salt, Sugar, Pepper & Nutmeg
1/2 Teaspoon of African Chef's Caramelised Chillies
100-200ml Milk
Large Knob of butter heated to form 'Beurre noisette'
Method & Prep time 10-20 mins:
Finely chop your onion and fry in a little sunflower or rapeseed oil until golden brown. Season with a pinch of sugar and set aside.
Wash then peel the potatoes and cut them into even sized pieces and wash again to remove excess starch.
Boil or steam your potatoes until tender.
Drain the water and leave the potatoes to dry out for 2- 3 minutes. Place the cooked potatoes into a pan (here's my trick - use a hand whisk) to make light mash. Season the potatoes, slowly adding milk and beurre noisette butter, mixing until you have light fluffy mash.
When serving place 1/2 of the AC's Safari Style Chillies onto each potion of mash and sprinkle with the onions and parsley and a quick grate of nutmeg!
Make sure to mix your onions and safari style chillies just before you eat this delicious mash!
(As a quick vegetarian meal, add some grated cheese on top of the mash and serve with watercress drizzled with olive oil.)
